Chlorophyll and carotenoid are the main pigments that responsible for coloration of citrus fruit. The changes in their contents related to development stage During fruit maturation, carotenoids massively accumulated flavedo juice sacs, while chlorophyll decreased rapidly. In contrast, increase content decrease observed during regreening process. addition, plant hormones environmental conditions play important roles regulation color this review, we summarized sacs maturation Current understanding on molecular mechanisms regulated metabolisms discussed. Moreover, effects accumulation also presented review.
